One Thousand and One Nights with Codfish and Portuguese Wines

Since always, wine has taken a special place at the Portuguese eating table, as well as the noble codfish, that is part of the richness of the Portuguese cuisine, being one of the most consensual dishes from the major personalities.

With one thousand and one ways to prepare codfish, can there be one thousand and one wines to pair with it?

Best Portuguese Wines to Pair with Codfish

When we search for a wine to drink with a codfish dish, the pairing can be made with different wines from several wine regions in Portugal.

Let's see:

For a perfect pairing, we should use red wines without wood, with mild tannins, fruity and soft, young and aromatic from Douro, Alentejo, Lisbon, Algarve and Trás-os-Montes Regions, for example, Pinta Negra fom Adega Mãe, Versátil Tinto from Casa de Santa Vitória or Pomares Tinto from Quinta Nova.

At the white wines, some body, scent and with the presence of the respective acidity, like the Alvarinho wine (Quinta de Soalheiro) or from the Encruzado varietal. And why not some different varietals? Like Viosinho, for example, Castro Superior Branco from Quinta do Crasto and Viognier, from Adega Mãe.

Since codfish is a fish with low fat content, being the loin the most appreciated part in our recipes, the combination will be delicious. For grilled codfish and codfish salads, a Rosé wine could be the perfect pair, for example the Quinta do Cidrô Rosé from Real Companhia Velha.

Regarding the sparkling wines, pair codfish with the young, fruity, with persistence in the bubble to help with the juiciness of the dish, like the Pinot Noir & Chardonnay Sparkling series from Real Companhia Velha, and some full-bodied white wines, with wood fermentation, like Reserva do Comendador Branco from Adega Mayor or Pasmados Branco 2009, from José Maria da Fonseca, which pair perfectly with fried codfish or the famous Bacalhau à Lagareiro (roasted codfish with olive oil).
